Cider Cranberry Cupcake

Fall is my favorite season for sure and one of the best things that comes with this time of year is the tasty themed food. A favorite fall dessert of mine is a spiced apple cider cranberry cupcake. Here are the ingredients + steps in order to make this treat!


For Cupcakes
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter room temperature
1 cup light brown sugar packed
1 teaspoon vanilla extract
1 cup apple cider
1 can cranberry sauce

For Frosting
1 8oz cream cheese
3-4 cups powdered sugar
1 teaspoon vanilla extract
1/8 teaspoon cinnamon
2 teaspoons cranberry sauce


For Cupcakes

  1. Preheat the oven to 350 degrees. Line muffin tins with 18 cupcake liners.
  2. Whisk flour, baking powder, cinnamon, and salt together.
  3. With an electric mixer, beat the sugar and butter on medium high. Add eggs one at a time.
  4. Alternate the flour mixture and apple cider in three additions on low speed beginning and ending with the flour mixture.
  5. Divide batter evenly among cupcake liners, filling them up 2/3. Bake for 18-20 minutes and set them aside to cool completely before coring out the centers.
  6. Once the centers are cored, fill each cupcake with cranberry sauce.
For Frosting
  1. With an electric mixer, beat the cream cheese and butter on medium speed for 3-4 minutes.
  2. Turn the mixer to low and add 2 cups of the powdered sugar one cup at a time. Add vanilla, cinnamon, and cranberry filling- mix it altogether for 30 seconds.
  3. Add a final cup of powdered sugar and mix well. Fill a frosting bag and frost the cupcakes. Top them all off with additional cranberry sauce, if desired.
